Cooking up the last of the Summer Veggies

As I had mentioned once before my dear friend from Smiley Dog Farm had a potluck at our house, and she and her good Permie friend came up with a delicious baked recipe. Here are the photos:


Squash, zuccini, butter, cheese, peppers, garlic and eggplant!
















I felt inspired and made an Eggplant Parmigiana from the Eggplants growing in the garden.
It was extra delicious, although my poor picture taking skills does no justice!
