In my limited gardening experience, I have never seen any flowering plant attract more bees than the thistle I have let grow to monstrous proportions. Each large mallow looking flower is full of pollen and bees busy with an appetite. My Prairie Sunflowers need the least amount of care and yield a showy display of yellow flowers that can be used for arrangements.
A relative of the thistle is this artichoke plant that I let go to flower. The blooms are quite stunning (enough so that I let forgo the opportunity to eat another delicious artichoke!).
